Carmen Lang grew up in Mexico City, but it wasn’t until she was an adult and owned an organic tortilla business in Nevada City, did she learn to make tamales.
“I had the idea of making tamales because I love food,” said Lang, the owner of Hola! Tortilla. She learned to make tamales by watching YouTube videos of grandmothers teaching traditional ways.
“We came up with a recipe using local meats and ingredients and lots of filling. I wanted mine to be different and they were a hit right away,” she said.
Now she sells up to 10 dozen tamales a week and is getting orders for Christmas and New Year festivities from her shop on Zion Street next to The Ham Stand and Fudenjuice.
This holiday season, Carmen wants to share what she has learned with the community.
She is teaming up with BriarPatch Food Co-op to teach “Chili Today, Hot Tamale” a mini tamale-making demo and tasting to be held from 5:30 to 6:30 p.m. Wednesday, Dec. 7 in the Community Room at The Co-op, located at 290 Sierra College Drive in Grass Valley.
The event marks the first in-person cooking demonstration offered by BriarPatch in years.
Participants will learn tips and tricks for making tamales – from preparing the masa and filling to assembling the husks. Guests will sample three savory tamales — veggie, chicken and pork — and one seasonal sweet tamale made with apples, cinnamon and walnuts. As an extra treat, all cooking students will receive one free tamale voucher for Hola! Tortilla in Nevada City.
For some, making tamales feels daunting. But Lang says not to worry.
“It’s not difficult but it is a lot of steps. It’s easier to make in a group,” she said.
Tamales originated in Mesoamerica as early as 8000 to 5000 BC. The preparation of tamales is likely to have spread from the indigenous cultures in Guatemala and Mexico to the rest of Latin America. Many communities and families have adapted the tamale to their own local cuisine.
“Tamales are great. You can eat them in the car, they are easy to serve, easy to store and very satisfying. You can make tamales of any kind,” said Lang.
All participants of this week’s demo will receive a step-by-step tamale-making recipe guide and virtual cook-along video by popular Co-op cooking instructors Hether Frayer and Chef Maria Teresa of Teresa’s Kitchen.

These demos will probably only be sticking around for a week, according to the Xbox Wire announcement story. "Some might be re-published to the Demo channel later, but many will simply disappear at the end of the week, so check them out while you can," we're told. It also sets expectations a little in that these are not your typical demos, comparing them to the early "show floor demos" you might see at an event like E3 or Gamescom, while also recommending hitting up the devs with any feedback on socials to help them improve their games before launch.
We'll update this once we have some more of the featured games — that Wire post says we should get the full list on the 6th when the event actually begins — but in the meantime, you should be able to go ahead and jump on into any of these that catch your eye. NORWALK — The Historical Commission plans to revamp Norwalk’s Historic Resources Inventory as the city seeks to revise its demolition ordinance in the wake of the oldest home being illegally destroyed.
Michelle Woods Matthews, a spokesperson for the city, said the Norwalk legal department "continues to explore all options" that could penalize Cesar Diaz and Kembery Mora, the homeowners accused of the Oct. 29 illegal demolition during what was supposed to be a renovation project of 21 Willow St.
The Thomas Hyatt House, constructed in 1677, was recognized as Norwalk’s oldest home prior to its illegal demolition in late October. Despite the city’s chief building official intervening during the demolition, the home could not be saved.
During the Historical Commission’s meeting last week, members discussed updating and improving the city’s Historic Resources Inventory, a list of Norwalk’s historically significant buildings.
“The Redevelopment Agency was proposing to use some of their funds to hire an outside consultant to come and do an inventory,” Council member Tom Livingston said during the meeting. “That inventory would be used in essence to replace the 50-year threshold and make it a lot easier to administer the delay ordinance. We would just look at what properties are on that inventory. Obviously, we would have to keep it up to date.”
The Historical Commission endorsed the move to seek a grant from the state to catalogue each Norwalk property, which may take years, according to Tod Bryant, founder and president of the Norwalk Preservation Trust.
“They want to give this money out. That’s the reason it’s not a matching grant,” Bryant said. “It takes a long time to do these things, about a year to do 150 to 200 buildings, because the way the state requires it to be done. The state has $20,000 grants, which are non-matching, $20,000 worth of free money for these inventories specifically.”
Municipalities often abide by the industry standard of preserving buildings 50 years or older as it is the threshold for admission to the National Register of Historic Places, Bryant said.
“What confuses people is the number, 50 years old and older, but the real issue is significance more than age,” Bryant said. “Clearly every building that’s 50 years old does not qualify for the National Register, nor would every building that’s 50 years old be worthy of a demo delay. It’s all about significance, but you have to have a place to start, and that’s as good as any and its pretty much the nationally recognized threshold.”
The National Register intended the 50-year mark to be a “moving target,” and there will be homes 50 years or older that are worth preservation, Bryant said.
Norwalk can also seek the $20,000 grant multiple times, ensuring all portions of the city are catalogued, Bryant said.
“You can go back as many times as you want to. You can do it in 200 building chunks and just keep going,” Bryant said. “The way it usually works is to get approved for the grant, send out a request for proposals to whatever list of people, and then this document requires a historic resource inventory form for each building and a 20-page narrative about the history of the area.”
The last time a full inventory of historic buildings in Norwalk was done was 1979, according to the Norwalk Preservation Trust.
The inventory, conducted from 1976-79, is a summary of 644 historic buildings, completed with a state grant for the Redevelopment Agency and Historical Commission, according to the Trust. Another phase of inventorying began in 2011, covering 336 structures in the area between Route 1, Interstate 95, the Route 7 Connector and East Avenue.
A historic inventory has no bearing on what becomes of the building, but provides more information on the structure's history and significance, according to the Trust.

There are plenty of exergames on the Switch, but Fitness Boxing: Fist of the North Star may be one of the most unique. This mash-up of the Fitness Boxing and Fist of the North Star franchises seems like it came out of nowhere, but I guess there are plenty of fans of the anime/manga that would love to look like like the series’ characters. For the last 13 weeks, the founders of 10 of the world’s most innovative startups have been in Fort Worth perfecting their new physical health technology. They are part of the world’s first physical health accelerator, and now they are ready to show the fruits of their labor.
The free public event will take place at the newly restored Isis Theater in the historic Fort Worth Stockyards on Tuesday, Dec. 6. The doors will open at 5:30 p.m. to the public, and founders of the companies will begin their formal pitches at 6:15 p.m.
Fort Worth is now the only city in Texas other than Austin that hosts an accelerator of this magnitude.
The journey to Demo Day
In September, the companies arrived in Fort Worth as a part of the Techstars Physical Health Fort Worth Accelerator, a first-of-its-kind partnership between the City of Fort Worth, Tarrant County, HSC, Goff Capital and Techstars — a global investment business that provides access to capital, one-on-one mentorship and customized programming for early-stage entrepreneurs.
The accelerator is focused on supporting companies building new technologies, treatments and therapies in the physical health space in areas such as rehabilitation, physical therapy, performance and exercise. The startups received hands-on mentorship, curated entrepreneurial content and programming, up to $120,000 in funding, and access to a vast network of mentors, investors, alumni and influential corporate executives.
“Innovation is a core HSC value,” said Dr. Sylvia Trent-Adams, president of the University of North Texas Health Science Center at Fort Worth. “The Techstars Physical Health Accelerator not only spurs important innovations that will help countless patients, but it will also help solidify Fort Worth and HSC as destinations for entrepreneurs who need support for disrupting the health care industry with new ideas and fresh perspectives. I couldn’t be more excited about Demo Day and everything it represents for our future.”
“We are excited to see how far these companies have progressed during their time here,” said Cameron Cushman, HSC’s assistant vice president of innovation ecosystems. “Their work to disrupt the physical therapy and related industries is going to pay dividends for patients and providers for years to come, and HSC was thrilled to have played a small part in the development of these startups.”
HSC received $4.8 million in funding from the City of Fort Worth and Tarrant County to start the physical therapy-focused accelerator program with Techstars. Equity investments into the startup companies are being made by HSC and Goff Capital to total nearly $10 million for the project over three years.
“The City of Fort Worth is committed to supporting our entrepreneurial ecosystem, and this initiative has been a big step towards putting Fort Worth on the map and establishing our city as a hub for health and life science innovation,” said Robert Sturns, Fort Worth’s director of economic development.
The accelerator represents a collaboration to fill gaps identified by many business-savvy observers in Tarrant County: access to physical therapy and the lack of a true early-stage accelerator program for innovative startup companies.
“These innovative companies are working hard to bring new tools to market to make us all healthier,” said Trey Bowles, managing director of the Fort Worth accelerator. “Their experience at Techstars has opened up a world of mentors, investors, experts, providers, clinicians and researchers that they would not have had access to on their own. This intensive program has allowed these 10 companies to make some serious traction and grow tremendously in just a few months.”

The 11/30 "AEW Dynamite" on TBS continued to remain under 900K overall viewership for a third week in a row, but the alarming aspect of the viewership figures released by various outlets is that AEW's flagship show garnered the lowest 18-49 key demographic rating since March 2021.
The show – headlined by MJF's first promo segment as AEW World Champion and Round 3 of The Elite vs. Death Triangle's seven-match series – was viewed by an average of 870,000 viewers, down from last week's 880,000 viewers. On a positive note, the show did see a slight year-over-year increase in overall viewership, as the December 1, 2021, episode of the show was viewed by an average of 861,000 viewers.
In the coveted 18-49 demo, the 11/30 "AEW Dynamite" scored a 0.26 rating, significantly down from last week's 0.32 rating. According to Wrestlenomics, the 0.26 rating represents 344,000 viewers, down from last week's 421,000 viewers in the same 18-49 demo. This number is the show's lowest key demo rating since the March 31, 2021 episode, which was one of the last instances of AEW going head-to-head against "WWE NXT" on Wednesday nights.
AEW's flagship show was on a hot streak over the summer, notching up over 1M viewers for five weeks in succession for the first time in the show's history – for episodes airing from 8/24 until 9/21. However, "AEW Dynamite" has struggled to hit the 1M mark since the 10/5 episode which was headlined by Chris Jericho & Sammy Guevera vs. Bryan Danielson & Daniel Garcia in the main event.
It remains to be seen if AEW can bounce back in the ratings for next week's show, which will be headlined by the Dynamite Diamond battle royale, Claudio Castagnoli & Wheeler Yuta vs. Jake Hager & Daniel Garcia, and an interview with new AEW Women's World Champion Jamie Hayter.
