Rahway, NJ – Robert Wood Johnson (RWJ) University Hospital Rahway is moving its popular healthy cooking demonstrations to a virtual format. The programs, run by Diane Weeks, a Registered Dietitian Nutritionist and Certified Diabetes Care and Education Specialist educator, are designed to teach people how to cook meals that are both healthy and delicious.
This month, RWJ Rahway will present a virtual cooking demonstration at 7 p.m. on Tuesday, Dec. 15; the program will be held via Zoom and the topic will be ''Cooking with Herbs and Spices.'
"Making any lifestyle change is challenging, including healthy eating, and I think folks struggle with what to eat that is easy to prepare. There is also the misconception that eating healthy is boring and expensive," said Weeks, who has served as a nutrition educator for RWJ Rahway since 2008.
Weeks will show home cooks how herbs and spices can be used instead of salt and fat to boost the flavor and color of dishes. She will also provide the recipes and answer questions. “The recipes feature delicious plant-based dishes that can be easily prepared at home,” she said. “Through these classes I want people to see that good health is more about eating real food than worrying about super foods and supplements.”
Prior to COVID, RWJ Rahway held free in-person healthy cooking demos at the RWJ Rahway Fitness & Wellness Center in Scotch Plains Fitness. When the center was built over a decade ago, it was designed with a demonstration kitchen to marry two basic principles: healthy eating and an active lifestyle. Over the years, the cooking programs have focused on themes as well as a range of nutritional topics, including anti-inflammatory cooking, the benefits of herbs and spices to boost nutrients, cooking for diabetes, cooking to fight cancer, among others.
"For the past 12 years Diane has increased the popularity of the program, thanks to her creativity, her professionalism, her great selection of recipes and the breadth of information she imparts as she cooks," said Donna Mancuso, director of community education for RWJ Rahway. "Not only is she well-versed in nutrition and an expert in diabetes, her style is natural, positive and entertaining.”
Attendees have shared their positive comments, stating that the cooking programs have enabled them to “broaden their nutritional horizons” and shown that “healthy foods can be delicious.” They have also come to see that “it’s easier to eat healthy than you might think.”
"Diane is nutrition champion who has helped our community learn how to cook and eat better," said Mancuso.
The Dec. 15 virtual “Cooking with Herbs and Spices” cooking demonstration is free and open to the public, however, pre-registration for the Zoom meeting is required and can be completed at https://bit.ly/2JHZoQi.
